With a little of this sweet confection, your cocktails will be anything but plain vanilla.
- 2 cups sugar
- 2 cups water
- 1 vanilla bean
- Storage vessel of choice (make sure it has a tight-fitting lid)
- Fine mesh strainer
Split vanilla bean lengthwise and carefully scrape out seeds with the back of a knife. In a medium saucepan, add the vanilla bean husk and seeds to the sugar and water. Bring to a soft boil, reduce heat, and simmer for 30 minutes, stirring occasionally. Let cool to room temperature and remove husk. Pour into airtight container, ensuring that you scrape the sides of the saucepan to get all of the vanilla. Store in the refrigerator.
